Okay, so the “Slackerville” isn’t completely accurate, but in the area of menu planning it is. I have been swamped! Not only have I had “normal” craziness going on, but my baby turned 8 last week and we had a cookout on Saturday and spent the day Sunday with Grandma L. at the pool. That has left little time for my extra “normal” stuff. So here we are now on Tuesday. I will go over what we had the past 2 nights and continue with the menu plan from there.
Sunday – Leftover grilled chicken, zucchini & chickpeas and salad.
Monday – Steelhead trout with sweet Thai chili sauce, quinoa, green beans & salad
Tuesday – Turkey burgers, sweet potato fries, roasted okra & salad
Wednesday –Mexican pizzas, refried beans, corn & salad
Thursday – Sushi with my friend
Friday –Mini-pizzas on Udi’s bagels, steamed broccoli and salad
Saturday- Family Reunion
Baked Goods
Dessert for family reunion
Chai Scones
